Description
Wild fermentation involves allowing natural processes to unfold, using gentle guidance on the part of the preparer. Airborne yeast settles on salted food and creates a delicious, pleasantly textured, side dish that is brimming with beneficial bacteria. We will create water-sealed crocks that allow for an almost care-free fermenting experience. The crocks, built of stoneware, will be waterproof, completely food-safe, and highly durable.

Clay on Main will be offering the following special one-day workshops throughout the season. The enrollment in the workshops is limited to allow hands-on activities; with a lot of one-to-one attention to insure that each individual reaches her/his full potential. Workshops run on Saturdays from 10:00 to 1:00 PM. Class size is limited.
